Nutty Nana Bread Overnight Oats

I don't know about you, but our mornings are nutso around here! My oldest has to be to school by 7:50, so getting three kids up, ready, and out the door by about 7:30 is a trick! Luckily we actually HAVE learned some tricks along the way, haha, so I'm sharing one of them with you today! These overnight oats are suuuuuper easy (think less than 5 minutes prep time), and ready to grab on the run in the morning! Every time I'm doing the morning routine solo, or we have to be out the door extra early, this is my GO-TO! Hope you love it as much as we do!

Nutty Nana Bread Overnight Oats

These overnight oats are the perfect way to start a busy morning. You can just grab and go! Prep takes practically no time at all, and saves you all the time and mess of breakfast in the morning!

Makes: 4 servings

Ingredients:
  • 1 small mashed banana (a little on the riper side is best: a few brown spots!)
  • 1/4 C almond butter
  • 3 T chia seeds
  • 3 T maple syrup
  • sprinkle of cinnamon
  • dash of vanilla* (optional)
  • 2 cups unsweetened almond milk
  • 2 cups rolled oats

Instructions:
  1. Mash the banana in a medium sized bowl (preferably one with a lid). Add the almond butter, chia seeds, maple syrup, cinnamon and vanilla, and mash together a bit more. Add the milk and stir contents around. Then add the oats, and mix once more. You don't need to fully incorporate everything to small pieces--some chunks of nut butter and banana are super yummy the next morning!
  2. Refrigerate overnight (or at least 4 hours), and top with desired toppings in the morning! I think sliced banana, berries, more almond butter, cinnamon, seeds, granola, or any combo of those that sounds good to you would be fantastic!!

Tip: Once you have this all mixed together, you can even portion it into individual glass jars (pint size), and have it totally ready to grab and take on the go in the morning!

*You could just use vanilla flavored almond milk instead!
